Apple Oat Cakes
These oat cakes taste so good you can almost forget
that they're good for you, too!
Makes 24 Oat Cakes
2 cups rolled oats
1 cup all-purpose flour
2 tablespoons sugar
2 teaspoons baking soda
1 tablespoon cinnamon
½ teaspoon ground ginger
½ teaspoon grated nutmeg
2 cups buttermilk
2 large eggs beaten
1 apple, cored and minced
¼ cup vegetable oil
Nonstick vegetable oil spray
- In a large bowl, mix together the oats, flour, sugar, baking soda, cinnamon, ginger, and nutmeg
- Add the buttermilk, eggs, apple, and vegetable oil and mix well. Cover tightty and refrigerate overnight.
- The next day, spray the griddle with nonstick vegetable oil. Pre-heat griddle to medium high. Pour batter by ¼ cupfuls and allow to sit for 1 to 2 minutes, until lightly brown (will bubble). Flip and cook until firm on the other side.

Cranberry Granola
In addition to the sweet golden raisins, the dried cranberries in this granola recipe add a nice tang....and a touch of Cape Cod.
3 cups rolled oats
1 cup slivered almonds
1 cup chopped walnuts
¾ cup sunflower seeds
¾ cup shredded coconut
¼ cup brown sugar
¼ cup plus 2 tablespoons maple syrup
¼ cup vegetable oil
¾ teaspoon salt
¾ cup golden raisins
½ cup dried cranberries
Preheat oven to 250 degrees F
In a large, combine the oats, nuts, coconut, and brown sugar.
In a separate bowl, combine maple syrup, oil and salt. Combine both mixtures and pour onto 2 sheet pans. Cook for 1 hour and 15, stirring every 15 minutes to achieve an even color. Remove from oven and transfer into a large bowl. Add raisins and dried cranberries and mix evenly distributed.
